Skimmer adjustment question

I have, what I think is, a Coralife 125 skimmer from about 10 years ago. It has been stored in a garage for a good 4+ years. I do not have the original pump that came with the unit, in fact, I am just using pumps that were stored with the tank, sump and other equipment, so I am not sure of the brand, model or stats. Anyway, now that I have the skimmer set up using a smallish pump in my recently set up tank but I cannot seem to dial in the setting. When I turn the knob, the water level in the skimmer chamber jumps up or down very quickly. When I add or remove water the same thing happens. I am having trouble dialing in the settings.

Is this a result of the unit being older and/or being a lower end skimmer? Could it be a result of being stored and out of service for a long time? Could it be that I have an incorrectly sized pump?

It may take a while to "break in". Also water conditioner and newly mixed water can make these things very touchy
