I watched a guy kind of peel off a couple of polyps from the rock they where on.

The easiest way is to gently tear them from the base and stick them to an anchor. I simply use rock rubble as my anchor, but there are some very nice and clever new products for mounting frags.
In order to adhere them to the anchor material, you can use super glue gel, a rubberband (firm but not tight), needle and thread or just place them wedged between a couple of rocks. All the above mentioned processes are quite simple and successful.

i have a colony of fire and ice that i just got and i want to frag because it to big but i want to know when i peel them off dont you also have to rip them off the other zoas and wont that kill some of the zoas?

I prefer a razor to cut the matt they are attached to. pealing some times rips a polyp in half.
