Nori is use by most keepers of tangs. It's the stuff that shushi is wrapped in (seaweed).
Besides food, a large tank (long) should be used as tangs need room to swim. They start out small, but get large fast.

Nori would be excellent. It has all the vitamins your tang would need, but do keep in mind they will take brine shrimp also and that is nutritous too.

how big is your tank going to be?
I agree please don't use lettuce--use macroalgae(Nori, kelp etc) it is a much more natural food for them.
