bio balls

I've never had a problem with Nitrate, my tank is running 5 months and my nitrate which has always been 0 is bouncing between 5-20, water changes bring it down. I use a wet/dry with bio balls and protien skimmer. I began taking out the bio balls today. I plan on taking out one third per week for the next three weeks. Is this too fast/slow?? I have about 120lbs of Live Rock.

thank you
