Removing Canister Media all at once?

I've ran filter media (ehime substrate pro) for over seven years, and my nitrates now read 50. So I figure I should kill the nitrate factory. Now the question is can I pull it all at once or should I ween my system off it ? I do have 500lb of LR and 5" SB. I run a carbon and a po4 reactor off my gravity fed fuge .The canister feeds from the main to the fuge.So next question what to put in the canister filter?

With 500lbs of LR and a 5'' SB, I think you can pull it out without any negative side effects.
