Theory behind Denitrators/looking for testamonials

I now have not one, but 2 denitrators courtesy of a local reefer (Thanks man!). One is a sulpher denitrator that he himself made, and the other one is filled with bioballs. I'd like to have a little bit better understanding behind the theory behind how these work. He mentioned something about colonizing bacteria in both. I had bioballs in my sump long ago though, and pulled them out because they were creating nitrates... So I'd love it if someone could either explain these to me, or send me some websites with good reading... Why will Bioballs work in this denitrator, but not in a sump? Has anyone used any of these? Do they work? One is the weipro nitrat reductor from Japan, the other is a homemade Sulpher denitrator. Which is better? Should I hook both up and see what happens?
