Is something bad going to happen if ....
If i overflow my skimmer's collection cup and all the poop goes back into the tank ? Probably a week's worth of poop, enough to fill a tall/small starbucks coffee cup....

It's not the end of the world, but dumping that much at once isn't good, either. Do a small water change and run your skimmer wet for a day or two to get that gunk back out.

I've done that quite a few times and didn't suffer any ill effect. I don't know about water params though because I never tested after this happened.

run carbon in a phosban reactor or canister filter if you are not already doing that. Change the carbon out in three days.
Also run a filter sock over the drain line for the next three days. I agree with the water change mention above---20 per cent

I can see your concern. If you think about it, it no worse than not running a skimmer kinda and lots of folks dont run one. Water changes like twice over 3 days and skimm more is all I would do.
