Shipping Fish Rookie

I have to ship my 14" Bamboo shark down the east coast and I have never shipped anything before. 1) Is UPS or Fedex more reliable/better? 2) Any tips on shipping a 14" shark? 3) What are the basics of shipping... packing, heating, pickup/drop off, etc.. 4) How do I give the buyer a "quote"?
