Mold
I just did my first wet test of my new JBJ 28, and after draining it I'm not able to get all of the water out. Am I okay to just let it evaporate at this point, or should I be concerned about potential mold growth?

How much water is left? I wouldn't worry about mold, but throwing a fan over it to help evaporate the water a bit quicker than just letting it sit wouldn't hurt

Unlikely to get mold in saltwater (assuming your test was with saltwater). And not much will grow if the water is in dark areas (inside pipes or whatever). You will get some salt left behind when the water evaporates away.
