Skimmer, Sump Baffle Height

Recently purchased an Aquamaxx EM-100 and am trying to decide the height of my skimmer section in my sump. Manufacturer states 6-8 inches of water but no more than 10 inches. When I look at the output this just doesn't look right. I'm assuming I want this completely underwater when full open as in the picture? or should it "fountain" fall back into the skimmer section. Where would you go if designing baffle height?
