Sump size

What's a minimum sump size I would need for a 125 gal tank?

I would go as big as you have room for.
There is never enough space in these things...
Also the bigger the volume of water, the easier it is to maintain consistency.

I’m pretty happy with my 40gallon breeder sump on my 125, but there are days I wish I had more room to make it easier to keep things neat.

Bare minimum is probably 20gallon imo, but that basically leaves you room for a return pump and skimmer and not much else I would guess...

40 gal is what was supposed to come w/ my tank, but the shop wasn't able to get it made in time so thye offered me their 33 gal at a substantial discount.

Remember - A sump will only run about 1/2 full.

Go as big as you have the space for. I'm running a 75 gallon sump on my 125.

There is no "tank size = X Sump size" formula...

In general the bigger the better (to a point) as more water volume is typically more stable and easier to run as it takes more of a change to impact parameters.. More water volume also typically = more work/larger water changes/more cost to run,etc... So there is a trade off there..

You also basically want it to be big enough to house the equipment you want to run in it.. One that just wants a skimmer or small fuge area may not need the sump space that someone with skimmers/reactors/fuges/,etc... may need..
Maybe you don't want a skimmer or a fuge so a small sump will help increase water volume some with no other benefit.. Maybe its just a place to put your heaters..

Technically no tank "NEEDS" a sump.. Its just a place to hide equipment and increase water volume if you want..
