Sand Size???
What is a good grade size for sand? Would 1mm - 2mm be ok?

Well, that does depend on the animals you want to keep. For the most part, I go with the finest-grained sand products. They are much easier to keep clean, in my experience. 1-2mm chunks are large enough to allow a lot of detritus to sink in and rot, although that's not a problem if you clean the substrate often enough.

That would be fine. What really matters is the appearance you are looking to get. Some people stay away from the sugar fine sand because it blows around easily.
