RO/DI usage for small systems (small weekly output)

I go through only about 5-7 gallons of water a week between mixing saltwater and topoff. Will be setting up another tank soon so output will increase.

I have an RO/DI system, but haven't set it up yet and I'm tired of running to the LFS or Grocers for my water.

Any suggestions for running my unit. (produce the 7 gallons at once and let sit idle for a week? Produce 1 gal / day?)
