How to tell if I'm feeding too much/little

I am trying to get my feeding just right so that I don't have too many extra nutrients in my tank but I have a hard time figuring out where the sweet spot is.

I think I could probably feed more than I have been but when I do that, some fish gorge themselves (bangaii cardinals seem like the never stop eating. Sometimes I think they look like they are ready to blow up. Can they over eat?) while others barely get a few pieces.

All food is gone within like a minute, should I put in more shrimp? (I've mainly been feeding a combo of frozen algae enriched brine shrimp and mysis shrimp. I rince both of them before adding to the water).

What do you think? I want all my fish well fed but I don't want them to blow up. I think right now I'm erring on the side of too little food.... I think....

I think I will feed more, but before I do, any one know if Bangaii cardinals can eat so much that they die? It might be a funny thing to worry about but I don't know if fish can do that or not, eat so much that they get issues and die...?

My cardnials eat alot as well but they do eventually stop. Typically I quit feeding when the pellets manage to make it to the bottom. Sometimes I'll feed as often as three times a day.
