Whats a good food source for them and how much.

I feed mine every other day or every 3 days.

He eats shrimp reight from the supermarket, clams, crabmeat, just about anything

Krill, Clams, Squid, just about all meaty foods. Snowflake eels either can't see or can't see very well so you have to put the food near it so it can smell it.

Yea they have horrible eyesight they go by smell. Get a feeding stick or tongs and wave it near him hell chew it down. Eventually hell know when he sees that stick its time to eat.
