curing rock in the tank
I have a bare 125g tank - i have very thin layer of CC just enough to cover the bottom - i plan on adding about 3 inches of fine sand on top of that - then add LR same day - question is when i let the LR cure in the tank will all the 'pests' just die from starvation? what about the life on my rock? how will this affect life on the rock / copes and amphi's in the sand? also - are there any creatures i can have in the tank while it is curing for that 1-2 month span? what should i feed them?

well theres' no guarantee that you wont have pests on cured rock to begin with. You just get what you get i guess. The life on the rock may or may not live, but for the most part, stuff like pods will survive thru it.
and honestly, i've never had a tank take 1-2 months to cycle when using live rock. I've had anywhere from 2 days for my "cycle" (just a small spike in amonia and whatnot) to happen, and i've had up to like 1 month tops...But the first time i cycled a tank it was just FO w/no live rock and that one did take longer...so imo, live rock will spead it up just a bit. But no, dont add anything untill your amonia and nitrite go back to 0.

Yes getting anything or lots of differant critters is by chance. I have 3 good LFS which have already cured rock with lots of life which helps. most pods do make it and peanut worms seem to withstand the spikes. Your tank will spike with uncured live rock and you can only tell whene its safe to add stock by testing.
