Miniatus tend to hide a lot. IME, they are often a streak of red at feeding time, and then you see a cloud of sand as they dive back into their hole. That's even more likely in your situation, given that panther groups can get sort of mean, especially when already established.

I have a miniatus and a six line soapfish in my 120. The miniatus is out more than I normally expect a grouper to be out, but often times I can just see the red head sticking out of one of its caves.

I had both in a 290 for a while. I got the panther first, then the miniatus. The miniatus was shy at first, but as it grew, it became very aggressive. It started killing the other fish in the tank. I finally had to catch it and find it a new home. But it never did bother the panther.
