Do you need gelatin in home made fish food?

Don't know if this should go into DIY but I read a few of the threads here and other places about the benefit of making your own fish food. Went and made some today and froze it in sheets, everything is great and fish like it except one question is: Do you need to use agar or some other type of gelatin?

I didn't use any and when I put the seafood puree into the tank it kinda just dissolved into a mess, the fish pick out any chunks but I feel like there is a bunch of waste getting dumped into the water column.

If you use agar do you end up thawing it then cutting the gelatin into bite sized chunks or do you just put a thawed gelatin chunk in and let the fish pick at it?
