ro unit and water heater
Can I tee my ro unit off from the cold inlet side of water heater?

Sure......... Although you may want to find an area that won't need to be disturbed in the event you need to replace said water heater...

Just make sure it's the cold side, hot water can damage the RO filter.

That's how I have it. The problem with that is sometimes the heat from the hot water tank can creep up to the cold inlet pipe. Before you open your tap to the RODI unit, feel the pipes to make sure the water is cold and that the heat did not creep up. I have a quick disconnect on mine, and just run the water out for a minute to get that hot/warm water out. Or you can tap it several feet away from the water heater to avoid that problem.
