Depends a lot of the type of skimmer as to how it does what it does, but skimmers remove dissolved nutrients/wastes from the water. These dissolved nutrients are what lead to poor water quality and algae blooms. The skimmers remove these "contaminents" via foam fractioning through the use of needle-wheels (Coralife Super Skimmer, EuroReef), injection-jets (Aqua C Remora or Urchin), or venturi-style (SeaClone). Think of when you are at the ocean walking on the beach. Remember that nasty tan/brown foam that you sometimes see on the beach? Foam fractioning. I can't seem to find the articles that folks referred to me when I started, but I'm sure someone will chime in with a link or two.

As to what type of skimmer you should get....do you have a sump or not on that 90g?? If you do have a sump, get the best skimmer you can afford. EuroReef and ASM rank pretty high, though the Coralife Super Skimmer is gettiing a lot of attention as of late. If you need a hang-on-tank model (i.e. if you do not have a sump), the Aqua C Remora Pro with a Mag 3 pump might be a very good option.
